Applesauce Meatballs

I have many cook books that I brought with us from our cross country move from California in 2019 to east Tennessee. Many I had to give away to the local thrift stores. A couple of years back I found this recipe. It is good one. You can add all the ingredients or add just a few. Make sure to add the applesauce. I use oats instead of bread crumbs. Try this recipe out and see how you like it.


Ingredients;

2 eggs

1 C. applesauce

1 C. bread crumbs or oats

1 tsp salt

1/4 tsp pepper

2 lb ground hamburger

2 Tbs chopped onion

1 Tbs chopped green pepper

1 Tbs diced carrots

1/4 C. diced celery

1 can of tomato sauce or diced tomatoes

2 Tbs salt.


Beat eggs. Add applesauce, bread crumbs, salt and ground hamburger. Brown. Mix carrots, green peppers, onions and celery in a small amount of oil. Cook slowly until done. Place meatballs in a dutch oven or a large casserole dish, add the veggies, then pour the tomato sauce or diced tomatoes over the meatballs and veggies. Cook all this in a 350 degree oven for 1 hour. Before serving, stir well and ladle over rice, potatoes or noodles. This makes a nice hearty meal.
