Been making some amazing pancakes for breakfast. Normal pancakes sit in my tummy like a rock. This recipe is from my THM (Trim Healthy Mama) cookbook. I just pair some fresh strawberries and 2 pieces of bacon to get my morning started the right way. Enjoy!
Pancakes:
1/3 cup THM baking mix. I make my own.
1 large egg
1/4 cup plus 2TBS of unsweetened almond, cashew milk or whatever you like best
1 tsp stevia
1/2 tsp baking powder
Little vanilla extract
In a bowl and mix up well. Use a griddle with a little bit of coconut oil melted on it. Pancakes are easier to flip. Makes 3 large pancakes
