Well, I missed a few items recently in my canned food preps. It's okay though. Rotating is important and I happened to miss a few cans that were past their date. Life happens and you move on.
Using this evaporated milk a year past its date was just fine. The can was in good shape and was stored in a cool dark area. Now, if the can looked bad as in bulging or super rusty I would have thrown this and the 4 other cans out.
I made a simple cream sauce with this and made a sausage potato soup one night for dinner. The cream sauce recipe can be used in many types of meals. One of those versitile ones. Simple is always better for me. Also, by making your own cream sauce instead of buying condensed cream soups that have terrible ingredients in them is a win win.
Thick Cream Sauce:
3 Tbs Butter
3 TBS Cornstarch or Arrowroot Powder
2 Cups fresh milk, powdered milk reconstituted or 1 can evaporated mile and 1 can water
Salt, Pepper and chicken granules to taste
Melt the butter, combine cornstarch or arrowroot powder with milk, add to butter and cook until thick and bubbly on low hear so it will not curdle. Using a whire wish. Enjoy!!
